rainbow confetti loaf cake and cupcakes

A couple of days ago I decided to have a chilled day at home and admit defeat that days of sunbathing in the garden are well and truly over and now it’s time to wrap up warm and stay indoors baking lots of cupcakes and watching films. I had a rainbow cake mix in the cupboard so had the idea of making a loaf cake along with some cupcakes for the left over batter. I know that cake mixes are the lazy way of baking but in all honesty these came out so light and fluffy that they ended up better than any cupcakes I’ve ever made with a regular recipe, plus it saved tons of time and effort. To make the loaf cake you simply grease a bread loaf tin well and pour 2/3 full and bake for around 35 minutes, the cupcakes will need just 20. I whipped up some buttercream frosting for the cupcakes and a runny glazed icing for the loaf cake, both of which tasted absolutely yummy. I used the Duff Goldman mix which I found in Harvey Nichols and can’t recommend enough, although you could use the Betty Crocker version instead which I reckon is pretty much the same yet easier to get hold of. I’m keen on trying out making popcakes soon and I think that this rainbow confetti style would be absolutely perfect for them. There’s nothing like rainbow cupcakes to brighten up a rainy day!
