halloumi burgers and fries

Despite my blog being predominantly full of fashion based posts at the moment I do want to keep it varied and include lots of different types of post, hence why I’ve recently turned into a mini Nigella to put up some recipe posts. I am a self confessed fashion and beauty geek and I’m quite happy to add food geek to that list too. I cooked up some halloumi burgers the other day and not only did they taste yummy but took less than a few minutes to prepare. If you make a big batch you can store the extras in the freezer and just pop them on a defrost setting in the micro for whenever you get a burger craving.

2 x 400g cans chickpeas, drained

2 tsp ground cumin

1 tsp ground corriander

2 green chillies, chopped

2 gloves garlic

1/2 bunch spring onions

1/2 small bunch corriander

1 tsp salt flakes

2 tbsp plain flour

1 pack halloumi, diced

Put the first 9 ingredients into a food processor and whizz until broken down. Tip into a bowl, mix in the halloumi, and form into 6 burgers. Cook the patties in a little olive oil in a frying pan until golden and crispy on both sides. Serve with a white crusty bun and homemade fries.
